White Chocolate Almond Cookies

My daughters and I made these cookies during our Christmas Decorating Party. It was so fun! And how could it not be? Four kids, ages 10, 8, 6, and 2 in a teeny weeny kitchen, all wanting to do something for the cookies...what's not to love about that?? I also do not claim to be a very good cookie baker and these still came out great.

White Chocolate Almond Cookies

2 sticks unsalted butter, softened
1 cup dark brown sugar, packed
1/4 cup white sugar
1 large egg
2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
1/8 tsp. cream of tartar
1 3/4 cup AP flour
1 cup old fashioned rolled oats
1 cup chopped almonds
1 cup white chocolate chips

Preheat oven to 300' F. Using an electric mixer, cream the butter and sugars until fluffy. Beat in egg and vanilla. On low speed, add baking soda, salt, and flour. Mix completely. Stir in oats, nuts, and chocolate chips.
Measure out 2 tbsp. for large or 1 tbsp. for small cookies. Place round balls on lightly greased cookie sheet two inches apart. Press lightly. Bake for 20 min. for large cookies or 12-15 for small cookies. Do not over bake. They get crunchy on the outside but remain soft on the inside. Remove from cookie sheet and let cool.
